My life at the moment is completely different to how it once was. I spent 5 years sick with anorexia nervosia and depression as well as struggling with self harm and overexercising. I spent 2 years in different treatment centres.
And since 2012 i have been declared healthy from my eating disorder.

I have been blogging for 7 years, and my whole journey is written in my posts. I now represent healthy and happiness. I want to show anyone struggling that it is possible to recover, no matter how hard it may seem.

I now blog about recovery, my life, veganism and positivity!

2 meals from today

Sometimes i wonder where the time goes because its 18.30 and i havent done much today. The most productive thing i have done is wash my hair and shave my legs (The only reason i do this during the winter months is because i wear shorts to the gym XD and generally find it fresher, but  it takes so much time that sometimes it doesnt feel worth it XD). Otherwise the time has just flown by today.... Ive read as well which has been nice and even made some protein pancakes (using a coconut and vanilla chocolate protein pancake mix which i then mixed with eggs.) I used 4 servings as the pancakes weren't all for me. Ive used the mix before, and i find it extremely sweet and today i felt my body burning up from the inside, my cheeks going red (which often happens when i eat too much sugar) and just feeling nauseous and sick - which often happens when i eat anything with too much sugar. I dont know what the ingredients are but those pancakes dont seem as tempting anymore after feeling so ill afterwards.... usch.



But once the nauseous feeling passed all i was craving was salt (which happens after eating sweet) so then i made myself some roasted carrots and potatoes (using oil and salt as toppings/flavourings) and into the oven for 20-25 minutes. And i can say... it was like a dream dish. How can something so simple be so delicious?

Also, as you may have noticed ive started eating potatoes!! Ever since my time at Mando where i ate potatoes pretty much 2 times daily for almost 1,5 years. I then hated potatoes, the taste was awful... didnt matter if they were boiled, mashed, made as wedges or used in dishes etc i didnt like the taste of them. So it went pretty much 2,5 years where i maybe ate potatoes 5-10 times as they were part of a dish made at home or in a restaurant. But its only this year where i have started to eat potatoes again and actually they are ok... nothing beats sweet potatoe though. And i still cant stand mashed potatoes or boiled potatoes, but i fries or wedges are actually really good... if they are made ok. If they are too soft or very raw, i cant stand them and they just bring back thoughts of Mando or the hospital in Ireland. But it just shows, that tastebuds change... somethings which you didnt like before you can learn to like, or maybe you just need to go a few months or years and you will like the food again!!



Alot of food talk, but thats because that is pretty much the only thing today..... Tomorrow is a new day, with new energy and new things to do!!

  1. I know exactly what you mean with those potatoes. In hospital they kept serving potatoes or rice so I got so fed up with them and always associate those with the hospital. I still can´t really eat potatoes. But now after 2 years I´ve slowly starting to like rice again. Maybe I´ll get to potatoes too. ;D

    1. Exactly :) you can try different things with rice and see if you like it... or maybe just give it some more time!! :)

  2. Snap! Just sitting down to a dinner of roast carrots an potatoes (and veggie sausages!) as had a random craving for them!

    1. I don't know the ingredients but as they are protein pancakes i guess so. But my body acted very strangely... there was most probably sweetner and other weirs stuff. I don't use sweetner anymore so it might be that. .. who knows what it was XD

    2. Yeah, maybe you can do home made pancakes instead, so you can avoid all the sweeteners and chemicals :) Though your body should be used to it since you drink energy drinks and eat protein supplements with sweetener.. Anyway I hope you feel better today!! :)

  4. Hey, any day where legs being shaven happens is a huge success in my book! Your pancakes look amazing! I am not a huge pancake person, but every now and then, I get a huge craving for them. I think your picture may have instigated one of those cravings just now. ;)

    1. Hahha i agree and the dame with washing hair... that is a productive day for me!! There are so many different pancake recipes, you should definitely make some!!! Or waffles, they are much better according to me!

  5. roasted carrots??? hmm - have to try those - never heard of roasting them before but your pictures looked so yummy! you`re so right about taste changing. A while back I started drinking tea again after years of not drinking it having gone right off it - now I drink several cups a day! Coffee is another - but I haven't got the taste back for that yet - I keep trying it to see but noooo! And your pancakes look lovely - I`m thinking we don`t eat enough of pancakes here - only really on Pancake Day - but those look too good only to be eaten once a year :)

    1. They are delicious, really you can roast most vegetables and they are good! Ohh yes, that's like avocados as well, sometimes I like them and sometimes I don't. .. very strange!!

  6. i find it so hard to know what i like and don't like i literally have to eat something about 10x before it even registers and even then I'm unsure. did you get this?
