My motto is

My life at the moment is completely different to how it once was. I spent 5 years sick with anorexia nervosia and depression as well as struggling with self harm and overexercising. I spent 2 years in different treatment centres.
And since 2012 i have been declared healthy from my eating disorder.

I have been blogging for 7 years, and my whole journey is written in my posts. I now represent healthy and happiness. I want to show anyone struggling that it is possible to recover, no matter how hard it may seem.

I now blog about recovery, my life, veganism and positivity!

Snack idea

I saw this and thought it looked really yummy!! Definitely worth trying :) And of course you can use different ingredients and try different things :)
apple with almond butter filling raisins and nuts
Apple with banana almond butter filling, cinnamon, nuts and raisins

  • 1 big seasonal apple, cored
  • 1 medium frozen banana
  • 2 full TBSP almond butter (unsweetened)
  • 1 full TBSP thick raw honey or maple syrup (I used chia honey and highly recommend it if you can find it)
  • 1/4 tsp cinnamon
  • handful of nuts of choice (I used almonds, pistachios and walnuts)
  • raisins
  1. Add the peeled frozen banana cut in chunks to the food processor with the almond butter and honey. Process for few seconds until it becomes soft, gooey and smooth.
  2. Core the apple.
  3. Stuff the apple with the filling halfway, add nuts and raisins and then continue stuffing it all.
  4. Sprinkle cinnamon and walnut meal.
  5. Serve with more nuts and raisins.
My apple was beautiful, but massive! Depending on the size of your apple, stuffing might be enough for two.
