My motto is

My life at the moment is completely different to how it once was. I spent 5 years sick with anorexia nervosia and depression as well as struggling with self harm and overexercising. I spent 2 years in different treatment centres.
And since 2012 i have been declared healthy from my eating disorder.

I have been blogging for 7 years, and my whole journey is written in my posts. I now represent healthy and happiness. I want to show anyone struggling that it is possible to recover, no matter how hard it may seem.

I now blog about recovery, my life, veganism and positivity!

Raw strawberry mousse cake

Bottom:
2 dl sunflower seeds
2 dl almonds
10 fresh dates
1 tablespoon water
 
Mix it all together into a crunchy bottom. Press out into a round springform, about 24 cm in diameter.
 
Mousse:
6 dl cashews
200 g fresh strawberries
1 ripe banana
3 lime (juice)
1/2 dl melted / room warm coconut oil
1 cup agave syrup or honey
1 teaspoon bourbon vanilla powder
 
Mix the cashew nuts in food processor until they form a sticky mass / nut butter. Takes about 5-8 minutes. Stop inbetween to push down nuts from the edges.
Then add the coconut oil and blend some more.
Throw in the rest of the ingredients and blend until smooth mousse.
Pour over the nutbase and set in the fridge for about 30 minutes.
 
Strawberry glacing:
200 g fresh strawberries
1 lime (juice)
1/2 dl agave syrup or honey
2.5 tbsp chia seeds
 
Mix everything except the chia seeds
Mix in chiaseeds and let to swell for 15 min.
Spread gently over the strawberry mousse and set the cake in the freezer for at least a few hours or overnight.
 
Bring out in good time before serving and let thaw at room temperature, or happy for a long time in the fridge.
Garnish with fresh strawberries!
