My life at the moment is completely different to how it once was. I spent 5 years sick with anorexia nervosia and depression as well as struggling with self harm and overexercising. I spent 2 years in different treatment centres.
And since 2012 i have been declared healthy from my eating disorder.

I have been blogging for 7 years, and my whole journey is written in my posts. I now represent healthy and happiness. I want to show anyone struggling that it is possible to recover, no matter how hard it may seem.

I now blog about recovery, my life, veganism and positivity!

Dinner for 1!

Hahah, i have pretty much posted my whole intake for today - almost ;) Next stop food blog? Food and exercise blog? Nope... But during the summer i do have more time to be creative with my food and more time for exercsie, so yes... that is what i spend my time on. But i also spend more time with friends and familly, and a little less time on my blog and emails. So i guess food photos is better than none?

This evening i was once again home alone for dinner, Though thats no problem for me, I dont actually mind eating alone. However, i wish i could have made this meal for my whole family as it was SO delicious, and i know they would have enjoyed it just as much as me :)
   
Staring in the fridge and freezer, trying to decide what to make. Thinking i should just eat my go to, no inspiration chicken with some sort of vegetables and pasta or something. But then i saw the quorn burgers and thought, Burgers it is!!!
   No burger bread at home, so i resorted to making my own. Followed no recipe, but i have gotten the hang of improvising and now a days i just throw together ingredients and make blondies, ovenbaked pancakes, rawfood balls, chocolate & coconut oatmeal bars/balls, microwave bread etc etc and they turn out really good :)

4 slices of my home made burger bread, 2 quorn burgers fried in coconut oil, lettuce, tomatoes, cottage cheese & half an avocado.
   Full, yes very. But soo delicious that im sure i could squeeze in a 3rd just because it so yummy!!

You miss out on a WHOLE lot of yumminess when you dont eat or just stick to your plain, boring same old food!! Dare to eat something different, to try new things :)
Dare to get creative and dare to ACTUALLY eat!!! :)

Food is good for you, its fuel, its energy so that you can live. Its not just numbers.
Dont see your food as numbers or protein, carbs and fat.
Choose food which YOU want (not the lowest cal, or smallest thing avaliable) instead know what your body wants and be honest and listen to that!
If you want burgers - go eat 1. You dont have to eat 5, you dont have to eat burgers everyday. Just lke you dont need to eat salad and egg whites 5 times a day everyday.

  1. What ingredients did you use to make the bread? they don't look like 'normal' bread!
    P.S. just found out that I've accidentally gained weight (small changes helped!!)...a little summer surprise for me ;-)

    1. I just threw together some ingredients - didnt follow a recipe. I used wholegrain flour, oatflour, egg whites, quark and baking powder :) They turned out delicious, even if they were flat!! It still worked to eat them like proper burgers :)
