My motto is
'Dont let the sadness of your past & the fear of your future ruin the happiness of your present'

My life at the moment is completely different to how it once was. I spent 5 years sick with anorexia nervosia and depression as well as struggling with self harm and overexercising. I spent 2 years in different treatment centres.
And since 2012 i have been declared healthy from my eating disorder.

I have been blogging for 7 years, and my whole journey is written in my posts. I now represent healthy and happiness. I want to show anyone struggling that it is possible to recover, no matter how hard it may seem.

I now blog about recovery, my life, veganism and positivity!

Vegetarian/vegan lunch/dinner ideas

These are just some ideas which i came up with for vegetarian lunch ideas!!

Home made falafels - can be pared with pita bread and salad & garlic sauce ;)

Gnocchi/sweet potatoe gnocchi (this is absaloutly delicious!!!)

Wok with vegetables and beans!!

Pasta with a tomatoe/creamy vegetable sauce!

Vegtarian lasagna/zucchinni lasagna

Vegetable burgers/carrot & zucchinni burgers - can be paired with pasta/rice/potatoe or sweet potatoe fries!

Tortilla pizza - tortilla bread, tomoatoe sauce, cheese & topping = pizza!!!

Vegetable pie

Home made vegetable soup - Pair it with home made/or bought, fresh bread!!

Omelette - (if you're vegetarian and eat egg)

Lentil soup (dont prejudge this, its actually really tasty!!!)

Wrap/bagel with cream cheese/cottage cheese and veggies!

  1. What I really like to eat is a tomato soup with chickpeas! :)) I don't know if you can really call it a 'recipe' as it doesn't contain so many different things, put for me it's some kind of soul food ;)
    I always take a 500g pack sieved tomatoes and one can undried chickpeas (the ones that are already soaked in water!!) and put those two things with a bit oil in a pot and heat it up. I add lots of spices like thyme, rosemary, salt, pepper, basil and oregano (take whatever you like!) and then ---> a yummy meal is ready! :)
