My motto is
'Dont let the sadness of your past & the fear of your future ruin the happiness of your present'

My life at the moment is completely different to how it once was. I spent 5 years sick with anorexia nervosia and depression as well as struggling with self harm and overexercising. I spent 2 years in different treatment centres.
And since 2012 i have been declared healthy from my eating disorder.

I have been blogging for 7 years, and my whole journey is written in my posts. I now represent healthy and happiness. I want to show anyone struggling that it is possible to recover, no matter how hard it may seem.

I now blog about recovery, my life, veganism and positivity!

Raw orange mini cheese cakes

For 5 mini cheesecakes:  (I doubled this recipe and made 10!!!)

1 dl apricot kernels (If not almonds work well!)
3  soft fresh dates
1 tbsp cocoa
a good pinch of sea salt
1.5 dl cashews
3/4 dl juice from an orange
1 teaspoon orange peel
1 tbsp agave
1/2 tsp vanilla powder
1/2 dl coconut oil
1 tbsp cocoa
1/2 tablespoon chocolate agave

Mix (with a mixer) together the first four ingredients for the bottom. Then press into silicone molds.

 Mix together orange filling (middle points, all except the agave syrup) and fill 3/4 of the silicone forms (ontop of the cheesecake 'base'.)

 Add cocoa and chocolate-agave in remaining batter and mix some more. Then, add chocolate filling and makes that swirl with a toothpick. Into the freezer and hold you as long as you can - then tuck in and enjoy

*** Instead of the cocoa and agave, i just melted chocolate and poured it ontop of the cheesecakes :)
