Life without Anorexia

My motto is
'Dont let the sadness of your past & the fear of your future ruin the happiness of your present'

My life at the moment is completely different to how it once was. I spent 5 years sick with anorexia nervosia and depression as well as struggling with self harm and overexercising. I spent 2 years in different treatment centres.
And since 2012 i have been declared healthy from my eating disorder.

I have been blogging for 7 years, and my whole journey is written in my posts. I now represent healthy and happiness. I want to show anyone struggling that it is possible to recover, no matter how hard it may seem.

I now blog about recovery, my life, veganism and positivity!

Pistachio & vanilla balls

Yesterday i made these balls... and OMG!! They are soo addictive. And super yummy.
They took a while to make.. only because i bought pistachios with the shells on, so had to open them all. But it was worth it.
THere are barely any ingredients, and all healthy. So if you like pistachio i highly reccommend you make these!! ^^_^

Pistachio and vanilla protein balls
20 pcs

125 g of dates
1.5 scoop (about 30g) whey complete vanilla(Instead I used half a teaspoon of all natural vanilla powder )
50g pistachios (without shell) + 10 g to roll the balls in
15 g buckwheat cereal or oatmeal
Possibly a few drops of water

1. Place all ingredients in a food processor and blend until it becomes a fine pulp. Feel it with your fingers, it should go to "pinch" the dough so that it can be rolled. Add a little water (a few drops are enough) or more dates if it is too dry.
2nd Pour into a bowl and work the dough with your hands into a large ball. Divide the dough into 20 portions and roll into small balls.
3rd Mix the remaining pistachios in a blender so it gets a little smaller pieces. Roll balls in pistachios and place them in the fridge.
