My life at the moment is completely different to how it once was. I spent 5 years sick with anorexia nervosia and depression as well as struggling with self harm and overexercising. I spent 2 years in different treatment centres.
And since 2012 i have been declared healthy from my eating disorder.

I have been blogging for 7 years, and my whole journey is written in my posts. I now represent healthy and happiness. I want to show anyone struggling that it is possible to recover, no matter how hard it may seem.

I now blog about recovery, my life, veganism and positivity!

Brownies with a cookie dough layer on top (health-i-fied!)

Yesterday i made these delicious brownies with a cookie dough layer on top, and personally i think they are amazing!! And completely guilt free ;) A perfect lunch/dinner dessert.. or just a uick energy refill :)

 I used this recipe for the brownies:

INGREDIENTS:(I doubled the measurements to make loads!)
- 1 ½ dl quark/yoghurt (I chosed yoghurt)
- 1 dl milk
- 1 egg
- 1 ½ dl oats 
- 1 tsp baking powder
-½-1 dl cocoa
- ca. 1 dl sweetening (stevia, honey, agave, banana)
- If you want: ½ dl coconut flakes, peanut butter, vanilla sugar, nuts. 

1. Mix all of the dry ingredients
2. Add the rest of the ingredients
3. Bake in the middle of the oven on 200C for about 15-20 minutes.

For the cookie dough, i just mixed together some ingredients, so now accurate measurements... but i can give you an estimate...

1 1/2 can of chickpeas
1-2 tbs almond butter (can use peanut butter)
2-3tbs milk
stevia - taste to see how much you need/want
And if needed add a bit of oatflour if the mixture becomes to loose.

Directions: Mix all the ingredients - apart from the chocolate - together in a processor, so it becomes sort of like cookie dough texture. Then add the chocolate pieces. Place in the fridge for a while.

When the brownie has cooled down, then take out the cookie dough and spread it ontop of the brownie and place into the freexer for c.a 1 hour before cutting into pieces. And can then be stored in the fridge/freezer :)

I think you can also try warming the pieces/bars.. but i havent tried!!

    1. I know it sounds weird, but I think it tastes really good! I mean you add stevia and PB/somw nut butter so that guves it more taste ;) it might not be to everyones liking.. but ive made other things using beans as the base and my family have actually liked them as well :)
