Life without Anorexia

My motto is

My life at the moment is completely different to how it once was. I spent 5 years sick with anorexia nervosia and depression as well as struggling with self harm and overexercising. I spent 2 years in different treatment centres.
And since 2012 i have been declared healthy from my eating disorder.

I have been blogging for 7 years, and my whole journey is written in my posts. I now represent healthy and happiness. I want to show anyone struggling that it is possible to recover, no matter how hard it may seem.

I now blog about recovery, my life, veganism and positivity!

Banana & walnut bars

I made these on Tuesday, and i highly reccomend them!! :)
  I have also found a love for almond butter... Addiction number 100 :) 

Almond butter & banana = Heaven :) So if you're allergic to peanuts and have never tried peanut butter... don't worry.. you've got almond butter :)

Homemade banana walnut & protein bars
8 bar

2.5 dl (100g) rolled oats ( gluten-free to make them completely gluten-free )
4 heaping scoops ( 100g ) Whey Protein Powder Vanilla flavor - This can be substitued with 3-4 TBS oatflour (oats grinded to flour)
0.5 dl almond butter (or other nut butters optional ) (I used almond butter!!!)
2 tbsp stevia
2 Overly ripe bananas , preferably with black dots on *
30g walnuts
Optional: 1 tablespoon cocoa nibs / cocoa nibs

1. Preheat the oven to 175 C.
2nd Mix oats , protein powder/oatflour , walnuts and cocoa nibs in a bowl.
3rd In a separate bowl ( or food processor ) , mix bananas , almond butter, stevia and mix with a hand blender to a smooth paste .
4. Mix the banana mixture and the dry ingredients with a spoon , then pour the batter into a greased baking dish , about 18x20 cm. Bake for about 12-14 minutes. Don't overbake them , then they are just dry and boring. (I had mine in for about 10 minutes)
5th Remove from oven and let cool, then cut into 8 pieces , wrap them in foil and store in the freezer until you need them .

* The riper bananas the sweeter and tastier bar . If you use green / yellow bananas may need more sweetening.

These bars tasted really good :) Great as an on the go snack :)
